Baechu Guk (배춧국 / Cabbage Soup)
A simple Korean cabbage soup with doenjang, garlic, soy sauce, and tuna sauce.

Ingredients
- Cabbageas needed
- Minced garlic0.5 tbsp
- Water700 g
- Korean miso / doenjang3 tbsp
- Soy sauce1 tbsp
- Tuna sauce1 tbsp
- Saltto taste
Cooking Steps

Pour water into a pot.

Pass the Korean miso through a sieve, then stir it into the broth. You can skip the sieve if you want.

Add everything and boil until the cabbage becomes soft.
Tips
- Use salt at the end only after tasting because doenjang and tuna sauce are already salty.
Substitutes
Korean napa cabbage → Savoy cabbage or sweetheart cabbage
Both soften well in soup and are easy to find in UK supermarkets.
